Raw mango pieces slow-cured in peanut oil with fennel, fenugreek and clove. The classic Indian pickle — sharp, oily, deeply spiced, and impossible to stop eating. Sun-cured in small batches in Harda, Madhya Pradesh.

How to store it
Keep the jar closed and away from direct sunlight. Always use a clean, dry spoon — water is the only thing that spoils a good pickle. Refrigeration is not needed, but it keeps the colour brighter in summer.
